Girl Dinner, Elevated: High Protein Dill Pickle Chicken Salad Plate
Girl dinner gets a bad rap. Crackers eaten over the sink, a handful of whatever's in the fridge, dinner that's more of a shrug than a meal. I love the idea behind it (low effort, no real cooking, grab and go) but I wanted to build one that actually holds up nutritionally. Before I was a dietitian I worked as a pastry chef, and one thing that stuck with me is that assembling is its own skill. You're not cooking, so you can't fix anything with heat or time.
